Making Unpredictable Blood Sugars Predictable – When you have insulin-dependent diabetes, you cannot predict what your sugar level will do. You cannot get the balance right between blood sugar and insulin. You will always be wrong. If you happen to get it right, it is only by accident.

If you didn’t take any insulin at all, then your blood glucose would probably not come down. However, you won’t need as much insulin if you limit eating high-glycemic or highly processed carbohydrates. Conversely, if you don’t require as much insulin because you focus on very low-glycemic carbohydrates in place of those found in the typical Western diet, then you won’t need to correct low blood sugars (hypoglycemia) with as many carbohydrates in order to stay in a healthy range. If you eliminate high-glycemic or highly processed carbohydrates, then your blood glucose will not spike nearly as high (if at all!).

Blood glucose levels in people with diabetes vary with increasing unpredictability as the consumption of carbohydrate increases.”
A change of your diet and lifestyle can help you manage your blood sugar in a much more predicable range, avoiding the roller coaster of highs and lows. You may find you have fewer hyperglycemic and hypoglycemic episodes, and when you do have them, their intensity will be slight (i.e., not as steep as those caused by the larger under- and over-doses of insulin that often accompany high-carb foods).
The bottom line is that when you eat the type of carbohydrates found in abundance in the typical Western diet, your risk of under-or over-dosing insulin is greater in magnitude because you are using larger amounts of insulin to cover the effects of these carbohydrates in your body. This makes blood sugar control less predictable than it should be for optimal health.
